Preparation


1. Prepare the Garlic-Infused Stock: In a small saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant. Be careful not to let it brown. Pour in the dissolved stock cubes and water mixture. Bring to a simmer and let it cook for another 2-3 minutes. Remove from heat and allow the garlic-infused stock to cool down. 2. Combine Ingredients: In a large mixing bowl, place the chicken mince meat. Add the gluten-free breadcrumbs to the mixing bowl. Crack the eggs into the bowl as well. 3. Add the Infusion: Strain the cooled garlic-infused stock through a fine mesh strainer to remove the garlic pieces. You'll only need the liquid. Gradually pour the strained stock into the mixing bowl with the chicken mince, breadcrumbs, and eggs. Mix the ingredients thoroughly until well combined. The mixture should be moist and well incorporated. 4. Shape the Meatballs: Preheat the oven to 180°C (350°F). Lightly grease a baking sheet with the remaining tablespoon of olive oil. With wet hands, scoop up a portion of the meat mixture and roll it between your palms to form a meatball. The size is up to your preference, but make sure they are relatively uniform for even cooking. Place the formed meatballs on the greased baking sheet, leaving a bit of space between each. 5. Bake the Meatballs: Place the baking sheet in the preheated oven. Bake the meatballs for about 20-25 minutes or until they are cooked through and have a golden-brown exterior. You can cut one meatball open to ensure it's cooked to your liking, with no pink meat in the center. 6. Serve: Once cooked, remove the meatballs from the oven and let them cool slightly. Garnish with chopped fresh parsley if desired. Serve the chicken meatballs as a delicious appetizer, main dish, or even in sandwiches.
