ingredients
1 courgette (zuchini)
2 red onions
soft goats cheese
pizza base
Small pack of tomato sauce
garlic
oregano
salt
preparation
Put salted tomato sauce to boil in a small saucepot as long beforehand as possible. Add water whenever it thickens.
Preheat the oven.
Dice the courgette into bits half a centimeter thick. Drizzle with oil and herbs. Microwave it for about 3 minutes (or until it's soft).
Slice onions into rings
Spread the tomato sauce on the pizza base.
Sprinkle with oregano.
Add the courgette.
Put bits of goats cheese everywhere.
Add the onion rings.
Bake until done.
Story
This was an attempt to have a healthier pizza my kids can assemble themselves. This requires all bits to be ready beforehand- what the French call a mise en place. The result is slightly sweetish and the goats cheese should not be too sour if you want kids to eat it. An it is actually a lot healthier than other pizza types! Well, a bit, at least.
For a nicer result (but less veggies) slice the courgette thinly and lay it flat, bake raw.
